You may already have a favorite way to serve tacos if a few friends are coming over. But we thought it might be nice to have a handy list of building block recipes all in one place. In addition to taco fillings and toppings, we like to make a pot of Green Rice so that those who don’t want tortillas can simply make rice bowls. You can also use any or all of these ingredients to make quesadillas, too. (Follow these quesadilla directions.)
If you start with 1 pound of ground beef, 1 can of black beans, 1 recipe of Green Rice, 1 recipe of Quick-Roasted Butternut Squash, and all (or some!) of the toppings, you can serve four people. Scale everything up to serve more people.
Tips: Keep the ground beef and/or bean fillings warm in a slow cooker. Keep tortillas wrapped in foil in a low oven. Rice reheats in a microwave beautifully. Everything else tastes bests at room temperature, so as long as you have lots of little bowls, you’re golden!

Limey Drizzling Sauce, Sour Cream or Queso Fresco
Sautéed onions and/or red bell peppers
Sliced scallions
Cilantro (sprigs, leaves or chopped)
Toasted pepitas
