Super-quick to make and delicious, this sauce is great on roasted veggies, crispy smashed potatoes, tacos - you name it! It can be made a day or two ahead and held in the fridge. If you are making it to dollop on crispy smashed potatoes, use sour cream instead of yogurt and a slightly larger amount than the mayo. For an alpha-gal friendly version, substitute coconut yogurt or coconut sour cream for the dairy.
Juke up the lime flavor with plenty of lime zest, and thin with lime juice until you get the consistency you want. The sauce will firm up a bit in the fridge. As an option, you can also add a little bit of grated garlic or a dash of cumin or smoked paprika.
Yields generous 2/3 cup
- 1/3 cup mayonnaise
- 1/3 cup Greek yogurt, coconut yogurt, or sour cream
- 1 to 2 tablespoons fresh lime juice, to taste
- 1 to 2 teaspoons freshly grated lime zest
- Kosher salt
1. Whisk together the mayonnaise, the yogurt or sour cream, 1 tablespoon of the lime juice, and 1 teaspoon or more of the lime zest. Season with a pinch of salt. Stir, taste, and add more lime juice to taste or for a thinner sauce. Refrigerate until serving time.
