1. Arrange 12 (or however many you want) graham cracker crusts that have been baked in muffin cups on a serving platter.
2. Dollop with whipped mascarpone and a spoonful of Roasted Rhubarb-Strawberry Compote. Refrigerate covered for up to an hour if not serving right away.
