This takes just minutes to prepare, but the olives and garlic offer a lot of flavor without a lot of effort.
Serves 2
• 1 bluefish fillet
• Salt and pepper
• 1 cup fresh tomatoes, chopped
• 1/4 cup green olives, chopped
• 1 teaspoon garlic, minced
• 2 tablespoons extra virgin olive oil
• 1 tablespoon fresh oregano
1. Preheat oven to 400 degrees. Oil a glass baking dish and place fish skin side down. Season with salt and pepper.
2. In a bowl, mix together the tomatoes, olives, garlic, olive oil, and oregano. Season with salt and pour over fish.
3. Bake for 18 to 25 minutes, depending on the size of the fish, until flaky or easily pierced with a fork.
