Making your own curry powder is easy, rewarding, and super fragrant. Once you’ve got it on hand, you can use it in soups, stews and in this Fragrant Vegetable Curry.
- 2 tablespoons ground cumin
- 1 ½ tablespoons ground turmeric
- 1 tablespoon plus 1 teaspoon ground cloves
- 1 tablespoon ground coriander
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon fennel seed
- 1 teaspoon dry mustard
- ½ teaspoon fenugreek seeds
- ½ teaspoon ground black pepper
- ½ teaspoon cayenne pepper or ground chili
- ¼ teaspoon ground cardamom
1. Combine the spices and put them in a dry skillet over medium-high heat. Stir continuously for 1 minute, or until spices are fragrant and pan is very hot. (Watch very carefully, you don’t want to burn them.) Remove the pan from the stove and transfer spices to a clean bowl. Continue to stir occasionally for a few minutes as the spices cool somewhat.
2. Let cool completely and store in an airtight container.
