I’ve got just the thing to warm up these between-season April days. It’s an easy-to-make, lightly spiced yogurt cake with a streusel filling and topping. With the variable “spring” weather, this Any-Time-of-Day Yogurt Snack Cake will keep things cozy and sunny inside regardless of what’s happening out your front door.

I call this an anytime-of-day cake, because it’s a welcome treat at breakfast, lunch or dinner, and anytime in between (which is especially important for the between-season months). This alone makes it pretty spectacular, but it’s also one of the easiest cakes to put together using very few utensils and zero power tools. A couple of bowls, a few handy utensils, and a square pan (I use Pyrex) along with some on-hand ingredients and you are set and ready to bake.

Make sure to read through the Kitchen Notes below for some tips. While perfect for April’s chilly, damp days, keep this cake on the top of your fall and winter baking list, too. The combination of cinnamon and nutmeg are delicate yet undeniably autumnal, and the addition of yogurt in the batter lends a tangy rich flavor to the baked cake. To further the fall vibes, consider swapping toasted, chopped pecans or even hazelnuts for the almonds and add a drizzle of confections’ sugar glaze for a festive look.

Folding Tips

  • To assure the softest texture and crumb in the baked cake, fold the batter just until the liquids and dry ingredients are blended, as a heavier hand will result in a denser texture.

 

Ingredient Tips

  • While room temperature ingredients are always best for an evenly blended batter, if you are short on time, this cake can handle cooler ingredients with success.
  • While I want you to have the option of not including the chocolate in the streusel filling, I highly encourage you to include it. As far as I’m concerned, a little chocolate in a snacking cake is never a bad idea.
  • I tested with store-bought ground nutmeg. If you are freshly grating your own, you might want to dial back the amount as freshly grated nutmeg imparts a stronger, fresher flavor. You can always increase the amount the next time around.
