Use this flavorful infused oil to drizzle over homemade pizza, grilled bread, grilled vegetables, sliced fresh tomatoes, creamy soups and more. The garlic and the lime are the real flavors here — you can dial back the heat by going with a couple of small pinches of red pepper flakes instead of ¼ teaspoon.

Yields 3 tablespoons

  • 3 tablespoons olive oil
  • 4 small garlic cloves, very thinly sliced (about 1 Tbs slices)
  • 1/4 teaspoon crushed red pepper
  • 1/2 to ¾ teaspoon (packed) freshly grated lime zest
  • Salt

 

1. In a small skillet, combine the olive oil, the garlic slices, and the crushed red pepper over medium heat.

2. Bring the oil to a simmer, stirring occasionally, until the garlic is sizzling (about 3 to 5 minutes). Continue cooking just long enough to infuse the oil, but don’t burn the garlic. (The garlic will be shrunken, transparent, and very slightly brown.)

3. Remove from the heat and stir in the lime zest and a pinch of salt.
