Pair this dressing with Bibb, Pea and Bacon Salad, or use it in a fresh cucumber salad.

 

Yields 1 cup

 

  • 1/3 cup plus 2 tablespoons mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon cider vinegar
  • 2 teaspoons fresh lime juice
  • 1/2 scant teaspoon freshly grated lime zest
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon minced fresh garlic
  • 1/4 teaspoon dry mustard
  • Pinch cayenne pepper
  • Freshly ground black pepper
  • Kosher salt
  • 1/4 cup buttermilk (well-shaken first)
  • 1 tablespoon thinly sliced fresh chives
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 tablespoon chopped fresh tarragon (or other tender herb, such as dill, mint, or cilantro)

 

1. In a mixing bowl, whisk together the mayonnaise, sour cream, lime juice, lime zest, sugar, garlic, dry mustard, cayenne, several grinds of fresh pepper, and a pinch of salt.

2. Add 1/4 cup of the buttermilk and whisk again.

3. Stir in the chives, parsley, and tarragon.

4. Chill if not using right away. It will thicken slightly as it sits, but will loosen again upon dressing.
