Hi Eleanor. I lean heavily into vegetables on Cook the Vineyard as that's what I concentrated on when I wrote my cookbooks. I did eventually eat only vegetarian for a few years, but lapsed when I started feeding a meat lover again! But I really enjoy developing vegetarian recipes and am so glad you're finding fresh material for your repertoire!
