Q. Help! I have a lot of oranges, grapefruits and other citrus leftover from the holidays. In an effort to reduce waste in my kitchen, I’m wondering if there are ways to preserve their deliciousness for future use?
A. Yes, oranges, grapefruits, lemons and limes can be frozen as slices, as juice, or as zest. Freezing is the perfect way to save these tasty winter fruits from ending up in the garbage can. Here's how:
· To freeze citrus slices, wash the fruit and cut it into slices. Put the slices on a baking sheet lined with parchment paper. Put the sheet in the freezer overnight. Once frozen, transfer the slices to a freezer-safe bag or container, label with the date, and store in the freezer for up to six months.
· To freeze citrus zest, rinse the fruit and pat dry. Use a Microplane-style grater to zest the fruit. Put the zest in a small, freezer-safe container (like a silicone mini-ice cube tray), label with the date, and store in the freezer for up to six months. Remove or scoop out however much you need whenever a recipe calls for zest.
· To freeze citrus juice, wash and juice the fruit. Pour the juice into an ice cube tray and freeze overnight. Once frozen, pop the cubes out of the tray and store in a freezer-safe bag or container.
