This Moroccan spice blend is the secret to savory tagines and is especially good with lamb, chicken, and turkey. I like to use it in squash soups, but it also pairs well with chocolate: try it in these Gluten-Free Spiced Brownies. It can contain up to 30 ingredients, but a simple blend can be made with spices you can easily get.
- 2 teaspoons ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon freshly ground black pepper
- 1 teaspoon turmeric
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
1. Combine the spices and put them in a dry skillet over medium-high heat. Stir continuously for 1 minute, or until spices are fragrant and the pan is very hot. (Watch very carefully, you don’t want to burn them.) Remove the pan from the stove and transfer the spices to a clean bowl. Continue to stir occasionally for a few minutes as the spices cool somewhat.
2. Let cool completely and store in an airtight container.
